We are pleased to raise completely grass-finished happy cows on our farm. Our cattle begin life on Sisler Farm, a nearby diversified conventional farm. Since we purchased them as yearlings, they do not qualify as full organic beef. However, we have made sure that no antibiotics or growth hormones were ever a part of their diet. They were raised on mother's milk and conventional pasture during their first summer of life. During the winter, they were fed conventional hay and sillage. Once our Black Angus and Hereford cattle arrive at the farm in the spring, they eat only organic pasture and organic mineral salt. Throughout the year, we have rotated them to prime pasture on a schedule that is conducive to great health for the animal, as well as the pasture. Round Right Farm offers two ways to purchase beef. You can purchase a Beef Share, which contains a selection of steaks, roasts, and ground beef, or a Half Beef where the price is based on weight and butchering preferences. Your beef will be butchered at an inspected butcher shop. After butchering, it will be delivered frozen and vacuum sealed in packages with labels detailing the cut and weight.
Our Beef Shares include cuts from both the front and hind quarters and are put together to offer a nice variety of cuts. They will contain a diverse mixture of Steaks, Roasts, Ground Beef and some miscellaneous items in roughly the same proportions as found in beef cattle. Many of our customers have expressed more interest in ground beef and steaks than roasts, and we have our cattle butchered accordingly. This means our shares contain about 55% ground beef, 15% Loin and Rib steaks, 10% other steaks (mostly round steak and sirloin tip steak, but also flank, skirt and hanger steaks) 14% roasts, and 6% miscellaneous items like soup bones, organs or ox-tail. By default, larger packages will contain a larger variety of steaks and roasts and have more variety of miscellaneous items. Each cut will be frozen, vacuum sealed and labeled with the weight. Our shares are delivered in November and December to your home, and include a list of each cut you receive so you can track what you have left through the year.
A Small Share will fit in a standard freezer and still leave room for other things. A Medium Share may fill a standard freezer completely.
$3.35/lb hanging weight + Butchering fee ($0.65/lb hanging weight + $25/half for standard butchering).
For example: A typical half beef will have 250 lbs hanging weight, so the cost with standard butchering will be $1025.
When you purchase a Half Beef, you have a wide range of choices in how you'd like it butchered. It is a great way to get an education in the various cuts of beef that are available to your kitchen and can be the start of some great culinary adventures as you learn the recipes specifically tailored to each cut. Half a beef is typically between 140 lbs and 180 1bs of finished product, which is more than will fit in a regular sized kitchen freezer. It is great to split between two, three, or four families. If split four ways, the amount of meat will fit in a standard freezer and still leave space for other things. If split two ways, the amount of meat can fill a standard freezer. If you have a dedicated deep freeze, half a beef can last one family a whole year. If you plan to split a half with some friends, we encourage you to check out the processing form so you can discuss how you would like your half to be cut up.
Each cut of finished product will be vacuum sealed. Unlike our shares, the cuts of meat in a half beef are normally not labeled with their weight and are stickered as "Not For Sale". This is required by law to help prevent buyers of a half beef from unlawfully reselling the meat. If you prefer to have each piece labeled with its cut and weight, in lieu of the "Not For Sale" sticker, the butcher will do this for 5 cents extra per pound of hanging weight ($0.70/lb instead of $0.65/lb).
